Bacon Blue Cheese Dip

Although we generally think of celery sticks as the least glamorous of crudités, with this dip celery just seems right. That nice, clean crunch is the perfect partner for the assertiveness of blue cheese.

Ingredients Directions

1/2 cup sour cream
5 tablespoons crumbled blue cheese
3 ounces cream cheese
1/4 teaspoon Tabasco sauce
10 slices bacon, plus 1 slice for garnish, cooked until crisp
1 garlic clove, minced
1/4 teaspoon celery seeds
1/2 teaspoon lemon juice
celery sticks, for dipping

Combine all ingredients except the celery sticks in a food processor and blend until smooth. Transfer to a serving bowl and chill in the refrigerator until party time.

Garnish with crumbled bacon. Serve with celery sticks, sliced on the diagonal and with any tough strings removed.

Makes about 2 cups of dip.

Make-Ahead Factor

The dip can be made 3 to 4 days ahead and kept covered and refrigerated. Keep in mind that the blue-cheese flavor intensifies with time.
