Zesty Baked Zucchini Squares

The recipe for this simple, savory dish originally came from our mom, who’s made it for years. She says it’s the one her friends and party guests most often ask her to share.

Ingredients Directions

1 cup Bisquick
1/2 cup finely diced onion
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried oregano
dash pepper
1 1/2 garlic cloves, finely chopped
1/2 cup vegetable oil
4 eggs, lightly beaten
3 cups thinly sliced unpeeled zucchini (4 to 5 small zucchini)*
butter for buttering the baking dish

*The thinner the zucchini slices, the better; they’re easier to bite through. We use the slicing disk on the food processor, but you can do this by hand with a box grater (use the long curved slits on the side).

Preheat oven to 350°F. Combine all the ingredients except the zucchini in a large bowl and mix thoroughly. Add the zucchini and gently stir to separate and coat each slice.

Spread the mixture in a lightly buttered 12x9x2 pan and bake until it is golden brown and pulls away slightly from the pan at the edges, 20 to 25 minutes. Let cool 10 to 15 minutes, then cut into 1-inch squares.

Makes about 100 squares.

Make-Ahead Factor

The dish can be made 2 days ahead and kept covered and refrigerated. Cut into squares and warm them in a 300°F oven for 6 to 8 minutes before serving.
