Spicy Sausage Squares
We created this recipe in honor of our mom, who believes just about any dish made with sausage is worth eating.

For the crust1/2 cup (1 stick) butter, softened3 ounces cream cheese, softened 1/8 teaspoon salt 1 cup all-purpose flour For the topping1/2 pound ground pork sausage1 cup shredded sharp white Cheddar cheese 1 (4.5-ounce) can chopped green chiles, drained 1 tablespoon chopped fresh chives 2 eggs 1 cup milk 1/4 teaspoon salt dash cayenne pepper |
Prepare the crustWith an electric mixer, beat the butter, cream cheese, and salt until creamy. Blend in the flour, then cover with plastic wrap and refrigerate for 1 hour. Prepare the toppingCrumble the sausage into a small skillet, breaking up any large chunks. Cook over medium heat, stirring frequently, until browned, 8 to 10 minutes. With a slotted spoon, remove the sausage from the skillet and sprinkle it evenly over the dough. Top with the cheese, chiles, and chives. Make-Ahead FactorThe sausage squares can be made up to 2 days ahead and kept covered and refrigerated. Before the party, warm them in a 300°F oven for 6 to 8 minutes. |
